Proffesional cooks need to discover the Dalstrong Shogun Series knives
I am a restaurant cook in Boston, MA. I have been using Wusthof knives since Culinary school because that is what my chef instructors recommended as the workhorses of the kitchen. I had invested a lot of money in completing a collection of those knives for every task in the kitchen. They are great knives and will last forever with proper care. However, I work at a fine dining restaurant and extremely thin, small, and precise cuts of all kinds of vegetables are a must. I have seen my fellow cooks rave about Japanese brand knives like Shun, Misono,, Miyabi, snd Global and after borrowing and trying them there is no comparison in their superior performancees, so I knew it was time toinvest in new knives. I wanted to get the best value for my money, so for the past two months I have been doing research online about the quality of different types is steel, manufacturing techniques, bevel angels and learned a lot in the process. I research dozens of Japanese brands and compared them, then I happen upon a brand that I never heard before, Daldtrong. I went to their website andread about the Shogun series knives. These knives looked beautiful and by their detail description they seem to have everything I was looking for in terms of quality and sharpness. I told myself it almost look to good to be true, but because of their warranty and the fact that I can try them risk free, I ordered the 9.5 inch chef and the 6 inch utility.When I received the knives, it felt like Christmas. I knew about the beautiful packaging already. But Zi was still impressed. But packaging has very little to do with performance. I immediately subjected botjh knives to the paper test and it was ridiculous how sharp they are right out the box. I took them to work the next day and several cooks came to me as soon as they saw the boxes and knew I have gotten new knives. They loved the way the knives look as much as I did, but the real test was about to happen when I ttried them for the first time with my prep work. It was such a pleasure to use my chef knife, soooo! sharp and balanced that I could breeze thru my prep so effortlessly. I have been using my knife for 4 days in a row, without the need to use my honing steel. Love the knives, high quality, beauty, and performance and a fair price. This is a great knife! It is extremely beautiful, sharp, has a nice weight, and is comfortable to hold. I am highly satisfied with it, as with every other Dalstrong knife that I own.Additionally, the Dalstrong customer service team went above and beyond to ensure all my needs, as well as any concerns that I might have had, were met to my satisfaction in a very professional manner.

Well designed and crafted knife that won't disappoint.
My latest foray into quality kitchen knives is a 10.25 inch gyuto made by Dalstrong. This is my first Asian design knife, so I was unsure what to expect. After a bout a week of use, I am blown away at how good this knife is. In terms of sharpness, looks, and feeling in your hand as you use the knife, this knife blows away my Wurstoff, Heinkels, and Zwilling knives. On to some specifics about this knife.Out of the box, this knife has a better edge than any knife I have ever owned. It would easily shred paper into thin cuttings without catching. The tomato test yielded a see through slice with ease. However, out of the box, it would not shave my arm. A few passes on my strop produced an edge that is best described as scary sharp. Borrowing a hair from my wife, I was easily able to cut the hair after the strop treatment. I have never been able to get my other chef knives anywhere near as sharp as the Dalstrong will get. And it holds that edge very well, needing only minor touchup during long use periods. If you have never used a knife as sharp as a razor, you are really missing an awesome experience.The fit and finish of my knife is beautiful! This also goes for the steak knives I ordered at the same time. The Damascus pattern is very attractive, the finish of the bolster is mirror smooth, and the edges along the spine of the knife come already smoothened. The craftsman that made this knife obviously took pride in his craft, as the spine of even much more expensive knives is often overlooked. Not with this knife; every inch of this knife seems to be made to very high standards. Even my wife commented on how beautiful the finish is, and how well balanced the knife is.Speaking of balance, the balance point of this knife is just in front of the bolster. This makes the knife feel very nimble while in use, despite the length of the knife.The handle material is relatively slip free even with damp hands. It has a western style handle with a very slight cross hatch pattern embossed in the material, which aids slip resistance. There is a certain beauty to something with this high degree of functionality.In summary, this knife has good sharpness out of the box and can easily be sharpened to incredible levels. Compared to traditional western knives, it gets much sharper and holds that edge longer. The knife is attractive, with near flawless fit and finish. It is well balanced, with a long belly well suited to both chopping and rocking slices. A real bargain!
