It is a matte finish with no build up.

Q: what area with two coats 1 Gallon Covers? and what is the time between coats?

a 200 sq ft room, 1 gallon will cover 2 times. I would wait 45min to 1 hour between coats

Q: Will this be good to use on our knotty pine ceiling and our old barn wood beams?

This would be great! It is a safe and virtually all natural finish. Just be aware it takes 30 days to completely dry/seal. And the area will smell like oranges for a long time. I built a bed out of yellow pine and this gave the wood a richer color with a strong orange scent.
