Q: has anyone used this by adding a second 120mm fan (instead of 140mm to ensure better dram clearance) ? How did it work ?

No, but I've read that adding a second 140mm fan only drops the temps 2-3 degrees at most. So you have increased noise and cost for the second fan with only marginal benefit.

Q: Does this come with a y splitter for adding a second fan in the future?

No. Only clips for the second fan. You need to purchase a Y-Cable if you want.

Q: Using the phanteks eclipse p400s case, will my ram be fine?

Really depends more on your ram than the case. Low profile ram is fine, but if you have really tall dimms, then may be an issue. Measure to be sure.

Q: will it keep an i9 10850k cool enough?

It should… I have it in an AMD 5950 X which is comparable and it keeps temps under 70. 80 tops under full load.
