Water-based, natural polymers. I’m careful too and would use anything that might leach harmful chemicals into my garden soil and thus my veggies.

No, it does not leave a glossy finish. You can paint over it or just leave the wood natural since it dries clear. Either way, you won't have to worry about mold or mildew. It is an amazing product!

Q: I was thinking of staining my wood with dark coffee and then applying the sealant. or should i seal the wood first and then apply my coffee stain?

The seal dries clear. If you seal the wood first the stain will not soak in to the wood. I would stain the wood first and then seal it.
