How should I clean this pan? Brown after one use

After each use, treat the pan as you would any steel or cast iron pan: wash it by hand, then season it with a light film of oil to retard rust. Should any rust appear, merely wipe it off. It is normal for these pans to change color after each use.

What are the actual dimensions for the pan versus handles? The details all give square dimensions which look like the box it comes in?

It's not square like the box. It's round and it's big it was bigger than I needed so I ordered a 18 inch which was perfect for home. I kept the 26 inch for my culinary class. I plan on cooking paella with my class.

What Gage steel is that and can I use wood fire for cooking?

I do not know the gauge of steel but yes this pan is heavy enough to be used on a wood fire, just make sure to season before use.

I have an outdoor propane gas burner. I was going to use this pan to fry tacos outside. do you think it will work for that?
