Shockingly excellent knife!
This is my second knife from Dalstrong and it won't be the last. I have a huge collection of much pricier knives as I'm a chef in a pretty well known steakhouse for the last 20 years so I'm not easily impressed. The 2 Dalstrong knives I just bought impressed the crap out of me right out of the box, and as much as I've used them every day they continue to impress me with how perfectly they hold the edge and how good they feel in my hand. The weight is sturdy and substantial, and it's never felt clumsy or too heavy to do intricate work. I'm pretty OCD about honing and sharpening all my knives once a week, and after using this 6 hours a day for 2 weeks I'm still waiting for the most miniscule sign the blade is starting to get dull. After a lot of years working in a restaurant it takes a lot to impress me, but damn Dalstrong well done!

An interesting knife with big results. Great for unskilled hands, amazing for skilled ones.
I've used this odd little knife for a month now. Daily use. Here's my review. I'm pretty good with a knife. I used to be a professional chef and I got there by way of prep-cook, so I've learned how to use one and more importantly, I've developed habits, some good, some bad, that are very hard to unlearn at this point. Firstly, the knife is beautiful and well made, but you knew that. Top tier steel and a lovely wood handle make it a joy to look at. This is true for all Dalstrong knives. Though I'd warn them about their silly box presentations and included lapel pins and all that; it comes off as desperate. Make a good knife, which you do, and leave it at that. Let it do the talking. This one does. It's a little weird at first. I couldn't understand what I had bought. I tried first to slice a tomato. It did fine but I didn't understand what the fuss was about. So I sliced a bagel. Okay, same thing. Did a good job but, so would any good knife. But wait - no crumbs. No juice. So I sliced some other things. This makes great incision-style slices that don't pull or remove matter with each draw or push. You wouldn't saw with a chef's knife, and you wouldn't chop with this one, but add this to your precision utensils and be amazed at what an impact this subtle design can have. I love it. But it's best part is that it's a quality knife that your other kitchen dwellers can use without worrying about that pointy end or the weight or length of a true chef's knife. My wife won't use any of my knives; she's not really into cooking and gets mad at me while I wince at her exposed fingertips and palm-down holds with wayward thumbs. But with this knife she's much more comfortable, allowing her to cut things like bread or vegetables into her salad or lunch without having to bother with my knife or some cheapo alternative. So I highly recommend it. Once you figure out how you'll use it and for what, you'll be in love with it and reach for it frequently. Dalstrong is my favorite knife maker hands-down, for quality, value, beauty, and function.

Habe bereits verschiedene Messer in ca. dieser Größe und muss sagen, bin von dem Dalstrong sehr beeindruckt. War ein Tipp aus irgendeinem YouTube-Kanal und ja, absolut super Preis-Leistungsverhältnis. Das Messer muss sich nicht vor 2-3 mal so teuren verstecken, ich habe den Vergleich. Ok, Schneidhaltigkeit werde ich noch sehen und die Anfangsschärfe ist jetzt nicht auf absolut Top-Niveau, aber das ist egal. Jedes Messer muss geschärft werden. Bester Punkt ist es liegt für mich super in der Hand, wirkt stabil und robust.. Auch eher schwer, verglichen mit hochwertigen Japanischen Messern dieser Größe, mit dickerem Rücken. Aber genau dadurch wirkt es so stabil, das perfekte Fleischmesser würde ich sagen, auch wenn es mal etwas grober zugehen muss. Der Griff ist von der Optik vielleicht das einzige kleine Manko, eher billiger Kunststoff mit merkwürdig facettierter Optik. Aber ist funktional und bestimmt langlebig. Die Damast-Maserung der Klinge ist zwar eher dezent, aber "schön". Ja, insgesamt gefällt mir das alles sehr gut. Besonders erwähnen möchte ich noch die hochwertige und im Detail wirklich schön gemachte Verpackung. Die ist tatsächlich selbst 4-mal so teuren Miyabi-Messern überlegen, hätte ich niemals erwartet. Einziger Punkt wo ich für dieses Messer abraten würde ist wenn man eine filigrane, flexible Klinge sucht. So ist es überhaupt nicht, schwer und robust ist der Eindruck.

Ich habe bereits 2 Messer von Dalstrong aus der Omega Reihe, das hat mich dazu bewogen dieses Messer aus der Shogun Reihe zu bestellen. Unglaublich die Qualität, im negativem Sinne Das Damastmuster ist an großen und vielen Stücken an der ganzen Klinge unterbrochen. Ich habe das Messer 2 mal bestellt und bei beiden sind diese Mängel. Das ist nicht einmal mehr B Ware, wir sprechen hier insbesondere zu diesem Preis schon von C Ware. Große Enttäuschung. Hätte ich dieses Messer vor meinen anderen 2 Messern bestellt wäre es nie zu weiteren Bestellung bei Dalstrong gekommen. So etwas kann man einfach nicht anbieten auch mit einer schönen Verpackung nicht !

I bought this knife because I have several other Dalstrong knives which are amazing quality and my curiosity got the better of me on this seemingly irrelevant piece of cutlery. Firstly, it’s much bigger and more substantial than it appears in the picture. It can spread butter or anything else that is relatively soft over an entire slice of bread in one fell swoop. There is no clumping of streaking so the layer can be finely spread over the whole slice with complete evenness. It’s also razor sharp for slicing so no need to use two separate knives for spreading and cutting. It’s also a great talking point when guests come around and it brings a smile to everyone’s face.......including mine.

An exceptional knife. Due to the folded steel construction it does not ring like a high carbon steel blade, when tapped. Due to the encapsulated VG10 super steel centre it does go remarkably sharp though and it holds its edge better than any knife I have owned to date. The key to the sharpness is the honing angle its construction allows. I've not sliced through hot butter with it, but that's how it feels. It is not a chef's knife as such, being much lighter, but I find it useful for just about anything anyway. It would serve as a very fine tool for someone less able to wield a larger heavier blade. The quality and finish are top class and along with the performance help to justify the price. I was a bit hesitant spending what this product demanded but once I had received it and started to use it, I was in no doubt I had spent my money well. I once owned a ceramic blade and whilst it was very effective it proved to be very brittle and I chipped the edge. Further to that, it was nigh on impossible to recondition due to the extremely hard nature of the blade. Professional care was probably in order. These VG10 blades offer near ceramic qualities but without the drawbacks and can be managed at home with good stones and a little bit of training. A knife of this quality stands by it performance and this can only be maintained by proper care and attention. Any knife can be rendered ineffective over time so my recommendation would be to invest in a top quality water stone to complete your investment. I use the BearMoo 400/1000 water stone as a minimum and this produces excellent results prior to finer honing or polishing. My experience of the Dalstrong company has been nothing less than very welcoming and friendly with a very strong emphasis on product quality and customer satisfaction. Along with the knife, I recommend both of them most highly.
