Great for cooking!
I used one of these once to make some vodka drinkable (I had a bottle to kill, but I’m really not a vodka person.) The flavor was convincing enough to mix with Coke, but it benefitted from a day with a piece of toasted oak stave in the bottle. It leans a bit towards grain and vanilla by itself, and while some “barrel” flavors are present, they’re not very assertive.Its real strength is for cooking. A splash will give you more Bourbon flavor than you’d get from the amount of actual Bourbon you’d feel comfortable sacrificing on food.I used one bottle for a four-pound batch of cranberry sauce this year, and everyone went nuts over it. It balanced perfectly, mingling with the other flavors without taking over. If you do this yourself, resist the temptation to use the whole bottle on a smaller batch - measure out a teaspoon, then test it! Like any good extract, the flavor is potent, and could become overpowering easily.

Amazing!
I’ve been trying to flavor macaron fillings (buttercream icing) with whiskey but using the real thing doesn’t pop - it’s very mild and there is a limit to how much I can use. I was super impressed with this! I was trying to make a pecan pie macaron and wanted a bourbon-vanilla bean filling. This just took it to the next level! Highly recommend.

Good idea, Bad result.
Same thing -- did not suit my tastes. Antibiotics state, no alcohol, so I followed those orders, for months. So I got the bright idea to use some flavoring -- sounded like it might work. I tried it in coffee, ginger ale, cranberry-cherry juice, orange juice to no avail. I tried it to the extent that I have no more of it, but I would never use it again. Maybe it'd be ok in baking, can't see how tho.

Good in eggnog
We have grandchildren in the house, so we need to make our eggnog non-alcoholic.Which doesn't taste very good.A teaspoon or two of this brings eggnog to life. It's a nice substitute for real bourbon is flavour is all you need it for.

My husband can't have alcohol because of his heart. This tasted like bitter vanilla flavoring

Wow!
It must be a taste bud thing. I have read the other reviews that pan the taste, but this is the closest I have found to the real thing so far. Getting the recipe right is challenging, but when you do. . . WOW! Magic!
