Young (aged typically less than 30 days) and smooth, it has a flavor that is intense but borders on sweet. It's a DOP cheese, meaning that it can only be produced in the region of Tuscany under controlled process to keep standards high. Milky and tender, this is a top table cheese, especially as a dessert cheese. Marries well with white wine.
