Bixby Mayan-Style Drinking Chocolate
A product of Maine, this organic drinking chocolate is seasoned with cinnamon, chipotle and sea salt--Mayan style. To prepare add 6 to 8 ounces of heated milk of choice to 3 tablespoons of the mix. I tried it with 7 ounces of plain almond milk and although delicious it was a little too watery.I wanted something closer to sipping chocolate not hot chocolate so I made a second cup with a scant 6 ounces of the milk substitute and it had the expected lovely rich consistency and intensity of sipping chocolate. The flavor is complex and not overly sweet with the cinnamon present but not in sufficient quantity to overpower the dark chocolate.The added element of a touch of chipotle pepper contributes a small buzz of heat in the mouth—nothing unpleasant although it may be an issue for people sensitive to any chili pepper heat. The sipping chocolate is spicy and satisfyingly indulgent and the product also makes a special cup of hot chocolate.The ingredients are straightforward--organic dark chocolate (organic chocolate liquor, organic dried cane sugar, organic cocoa butter, organic soy lecithin as emulsifier), organic cinnamon, organic chipotle and sea salt. For people with sensitivities the product does contain soy and is prepared in a plant that processes milk, peanuts and tree nuts. To estimate shelf-life the Best By date is 14 months in the future but dates will vary. Excellent.

Bixby Drinking Chocolate | Mayan Style Hot Chocolate Powder with Cinnamon, Chipotle & Sea Salt
Really superb and fun flavor of hot chocolate. If you've ever had a Mexican hot chocolate at your favorite restaurant, you know these are spicy and bold chocolatey drinks that often have chocolate as a collaborative flavor more than a standout one. This mix follows that philosophy in theory but could have a stronger punch of chili and cinnamon for sure. The chili flavor is on the mild side and appears at the end, and the cinnamon is a little lacking.To remedy this, instead of making it with straight milk, what I ended up doing was making a spiced tea that I had on hand and steeping this in the tea, then adding half cream/half milk that had been heated to it and letting it rest in the mug, covered and wrapped in a towel about 15 minutes. The temperature was great when I got to drinking it, and by that time all of the flavors had really developed and expanded. The tea defintely helped add some much-needed flavor, too.Overall this stuff is great if you dress it up a little, I just wish the flavor had a bit more punch on its own. The good thing is that the actual chocolate is very creamy and delicious if prepared right, so the extra little work to create perfect flavor doesn't bother me so much. I'd recommend this for sure to anyone who didn't mind tinkering with it a little to get it just right!

Unique and not too hot
To start off - I’m a wimp when it comes to anything spicy or hot and this was actually the perfect amount of heat for me. I had never seen “hot chocolate” like this with the chunks of chocolate instead of powder. Now I want all my hot chocolate to be like this because the thicker consistency is amazing.It’s super simple to make - hot milk and add some spoonfuls of this until it’s at the consistency you want. Obviously the more milk the thinner the overall consistency will be.You can make quite a few glasses out of just one bag and has gotten me through the winter. The flavor is really unique as well and when your first take a sip it’s just chocolate but when you swallow you can feel the spices going down and it adds a little extra warmth going down. I was surprised it wasn’t too spicy for me as I’m a wimp but I think the hot temperature helped the spices not feel as spicy as they should’ve been.Overall I’m super impressed with this chocolate mix in and I’ll be checking out other flavors by then as well

Delicious full bodied taste; chocolate chunks dissolved quickly

I discovered spicy hot chocolate after a friend recommended that I try it, although I’ve mainly only had powdered spicy hot chocolates before. My experience with Bixby is my first with ACTUAL chocolate pieces that dissolve.The verdict: delicious! This hot chocolate comes in little chocolate chunks, about half the size of a chocolate kiss, that dissolve when placed in milk. I tried it in soy milk (I don’t normally drink cow milk) and it was really good. Blended easily and quickly into the milk once I had warmed it up, and tasted full and rich. Personally I think I would have preferred just a little more bite to the spice, but I think the amount of spice they placed into it will appeal to the mainstream over what I prefer.Overall, I really enjoyed the chocolate and would recommend it. Chocolate pieces instead of powder really make the difference when it comes to a full, rich taste.

Cinnamon!
I wanted to love this as the Bixby company is less than an hour from where I live. I’ve been to their tasting room and bought their chocolates. But this is rather a disappointment. The chocolate bits appear to be coated in cinnamon. I love cinnamon, but the chocolate to cinnamon ratio is a more than a bit much and eclipses the chocolate taste.I’ve had two mugs of hot chocolate using the Bixby mix. In one I used four tablespoons of the mix alone (one more than it calls for on the packet), and for another I added a tablespoon of another brand of hot cocoa powder. This isn’t bad, but for the price and the calories (oh, the calories!) I wanted to be wowed and was not. Cinnamon isn’t expensive and it’s easy to add it to taste, so I would not recommend getting this particular iteration of the Bixby hot chocolate.
