You strip the wires to the length specified in the instruction or marked on the item and push them in. They don’t come out again, the harder you pull the tighter they get, which is why they are zero maintenance.

Can you use 6mm square cable (cooker wire) with these boxes as long as the load is under 32amp?

No, they're way too small. 6mm is a substantial cable

Is the picture actually of a J804 as there are 4 sets of terminals shown? (I believe the J803 only has 3)

CORRECT... J803 has 3 Terminals & J804 has 4 Terminals. If you order a J803 you will get a J803, if you order a J804 you will get a J804. The suppliers use the same image for both products.
