My first attempt at dry aging steaks. The results were mixed. After aging, the color was darker and the 3/4ā steaks were less compressible. That caused me to overcook a few of the six steaks I dry aged, since I was taught to use the end of the flipper to test for compressibility. The steaks hardly changed color on the grill. Internal temp was varied between steaks. Next time I will use thicker steaks, about 1-1/4ā thickness, so I can better manage internal temp of about 130* for medium rare. Iāll ignore the flipperās feel and the sear appearance. An expensive learning curve!
