Good introduction to Japanese cuisine
This is a few years old now but I guess traditional Japanese cookery hasn't changed much in the past decade. There are more recent offerings on Amazon if you want street food etc. This book starts with a short introduction to the history of Japanese food and regional differences, then goes on to advise on ingredients, utensils and crockery before listing recipes in broad categories such as noodle or rice based dishes. The layout is clear as well as quite pleasing to the eye. The only quibble might be the availability of some 'authentic' ingredients. Some are easily bought online but others will require a trip to an oriental supermarket and even then you might have to opt for Chinese or Korean versions in some cases. However it is a bargain buy and has even inspired me to try basic sushi with OK results.
