Delicious!
Have had for awhile before using so was pleasantly surprised how easy it was to rehydrate and use. Made sloppy joes and they were delicious. It makes a lot and we will get multiple meals from a cup and a half of the mix. After rehydration it easily doubled. Add some veggies in and it is a great meal stretcher and meat replacement. Will order again when it comes back in stock. Great product and I highly recommend it.

Tastes okay but needs work to make it great
I've been using TVP or similar products for a long time. I wanted to try something different and this seemed like a good idea. The packaging is a simple vacuum sealed bag and the instructions and nutrition labels are badly printed on a very small label and are difficult to read. Once you have a magnifying glass the usage instructions are minimal and not very helpful. You will need to add far more liquid to this than indicated. A lot, lot more. I ended up adding (carefully, stepwise) up to three times the amount indicated and could not get this to form burger patties. I used it as mince instead. The product itself has a nice meaty smell and using a mix of red wine and vegetable stock I was able to make it taste very pleasant. I will have to experiment more with the amount of liquid needed to fully hydrate this product. It is very, very thirsty for liquid though.I like it when cooked into food but will need to carry on experimenting to find the best way to make it into shapes. Recommended for those cooks who like to experiment.

Spice it up!
I have been eating the Harmony Valley Vegetarian Sausage Mix for two months now, and I can highly recommend it. A few practical notes:First, if you want more of a true 'sausage' taste, add some spices. I put the sausage mix into a bowl and then add two tablespoons or so of Italian Herb seasoning, then mix it well before adding water.Second: The instructions call for one and one-fourth cups of cold water. I use one and a half cups, which makes the sausage more moist. I do cook mine stove-top, in a pan, over medium-high heat, for about 2 minutes per side (until brown). It does not require much cooking. I make 10-12 sausage patties out of each package. Finally, as a insulin-dependent diabetic, this sausage does not affect my blood sugar. If I have read the package correctly, there are approximately 21 'net' carbs per total package, so divide said number by the number of patties you create. Here are the ingrediants listed on the Harmony Valley website:Soy flour, soy protein concentrate, vegetable oil (soybean and/or palm), wheat gluten, isolated soy protein, natural flavor, methylcellulose, salt, extract of malted barley. Contains 2% or less of spices, yeast extract, and beet powder.I am not sure what methycellulose is (some type of plant-based product), but it is actually sold on Amazon, and reviewers say they use it to make a glue! Other websites say that it is used to treat constipation. Anyway, it is the reason that you must use cold water for the mix (it only dissolves in cold water).Anyway, a very good, easy to use vegetarian sausage mix. I also like the hamburger mix, but I give the edge to the sausage, and so I now purchase only it.

Wow. Just... wow.
As most vegans can attest, straight-up substitutes for meat and cheese products (especially cheeses), by which I mean products that advertise themselves as being the same as meat/dairy, often taste like butt. It's sad, yet true. So, I was a little hesitant to give this a try but I said to hell with it and did it anyway. This was a pleasant surprise: It tastes great! Thus far I haven't gotten too crazy with recipes. All I've done is made regular burgers as well as a burrito mix. They tasted exactly as you would expect a regular burger or beef burrito to taste. I'm amazed.Note that it's still a little high in fat, but it's still a lower amount than regular ground beef and the price is comparable (at least where I live). Also, since it comes in a bag, you can buy in bulk and just use as necessary, rather than having to worry about it going bad. It's not "easier" to cook with in the sense that it can be just as messy if you have to use your hands to form patties, but it does cook much, much quicker and I would think that there's less chance of getting sick from bacteria and such.All-in-all, I'm incredibly satisfied and will be trying their sausage mix next.

Probably use it again
Not a bad source of protein via the net/delivery when Amzn Fresh doesn't deliver to your zip. But don't expect crumbles like burger used for stroganoff. That becomes a slurry. I expect to have a better result using it as patties since I could tell by how the stuff formed browned against the pan bottom. The taste is good if you brown it. But not remarkable. Think of this as a vegetable protein additive.
