Great alternative.
Just as good as any popular instant ramens but so much less salt. That's why I buy these occasionally. Make your own broth or invest in ramen seasonings or use leftover seasonings from ramen packs. At least 2-3 servings per bag. It's portion of into six small batches. I use two at a time. Worth the price because it has very little sodium

A bit softer in texture than a traditional ramen, but makes for a colorful, healthy alternative.
So far, I've used this ramen to quickly throw together stir fried noodles. I cooked them in boiling water before straining them, and cooking them in a pan with soy sauce, garlic, sesame seed oil, and vegetables, including hulled edamame. When cooked, these noodles became a grey-ish lavender coloration. I did find that they were a bit softer and less chewy than traditional ramen, and they did become a little sticky after stir-frying. However, it is possible that this was due to my cooking technique, as I don't make stir-fried noodles all that often. While these noodles didn't have quite as satisfying of a texture as traditional ramen, I still enjoyed them. Their flavor is very neutral, which means they should be highly versatile, and you should be able to season them however you like. Additionally, I found them to be more satiating than typical ramen, and left me feeling full for longer. I initially thought the blocks of ramen seemed a little on the small side, but it ended up being enough for me in the end. While these aren't my absolute favorite noodles, I think they're definitely worth a try. I like that these feel a little healthier than some alternatives, and they add a nice bit of color to dishes, thanks to the purple sweet potato they contain.

Tastes good! Cooks quickly (8 minutes) and can be eaten just as noodles, no need to add soup.
Used this as a quick breakfast or lunch with a veggie burger.

Good Buckwheat Ramen, Yam Doesn't Seem To Affect The Flavor, Normal Texture
If you like Ramen Noodles, chances are you will like these as much as any other Ramen. They are definitely better than the junk that comes in the cheap grocery store packs you get for $0.25 or whatever they cost now.A fair number of these "alternative" pasta or noodle formulations either have a strange texture when cooked or fall apart when cooked to a desirable texture. This has a good texture and doesn't fall apart when cooked. I can't tell any difference in the taste of this compared to other buckwheat Ramen noodles I've had. These would work fine for any kind of Ramen soup. If you add a moderate amount of protein and/or vegetables to these I'd say this bag could feed two hungry people. One hungry person can easily eat the whole package if it is just the noodles with some spices and maybe a few shrimp thrown in.There are 4 blocks of noodles in this bag. They are not individually wrapped and the bag doesn't reseal. When you open this bag, you'll want to consume the contents pretty quickly.
