Great allrounder Knife High quality and has survived a year in my kitchen
If you only want one general purpose high quality kitchen knife this could be the one for you. I have a good collection of fine damascus style knives to choose from but this Santoku is mostly my favourite go to knife for most jobs. It remains sharp and only requires a honing on a ceramic steel one a week or so to hold its edge to razor sharp. The reason I love it is its the right size for most jobs and the handle is very comfortable for prolonged use. The whole knife feels well balanced and deals swiftly with soft tomatoes to hard vegetables like swede. meat is cleanly cut without sticking to the blade.Dalstrong Shoguns are not cheap but the build quality is top end and the finish is also high quality. I know they are constructed in China but the materials seem to be genuine and have lasted in my kitchen for over a year now with no issues apart for the user getting the odd cut through being stupid and forgetting these are like razors when hone properly.

Excellent knife. Very impressed.
As an enthusiastic home cook, I thought I'd take the plunge and get my first 'pro' knife after many years with using whatever I could make do with in my knife block. I did plenty of research and set my budget at around the £100-ish mark, I decided that would be a good figure for a knife that I would hope would see me out. The Dalstrong Santoku knife caught my eye while on Amazon so I did some more digging online & read FB reviews along with reviews on here and decided to go for it after reading Dalstrong's commitment to customer satisfaction....I've been using the knife for just over two weeks now and just wow, not that I have used anything half decent to compare it to, but still wow. First of all, the presentation is beautiful, what a stunning looking knife and it comes in a presentation box with a handy booklet giving intructions on the correct way to hold, use and sharpening advice. A 'scabbard' with a pin lock for storage is handy as this lives in the drawer. The knife feels perfectly balanced in my hand after I mastered the correct way to hold it and sliced & dices like a scapel, my finger tip is testament to that.Overall, I'm very, very impressed & would definatley buy from thier Shogun range again should I decide to. It's a work of art & does what it says on the tin.With thier commitment to customer satisfaction, buy with confidence.

Usually, I don't write any review, and I don't like anything which was made in China, but I am feeling guilty this time if I sit back and do nothing. Because this brand, Dalstrong, is one of the best in quality and customer service (Nancy) in the world, I had bought 3 knives from them already including this Santoku.Although it is made in China, but they used the high quality VG 10 Japanese steel to forge their products, the efforts and time consumption are undoubtedly, my photos could speak for themselves.But the best of all, is their customer service adviser Nancy. I did had an issue with one of my item, however, Nancy solved the problem in the professional manner and patience. I can't thank her and the company enough to produce such a high quality knives with a fraction of cost. The best alternative to those top Japanese brands if you ask me

Amazing customer service from Dalstrong and a very good knife!
The customer service for Dalstrong appears to be the best around. I received the Knife through normal means from Amazon and upon receipt, it did lack the displayed folding pattern which was a bit disappointing. The knife itself is razor sharp with great balance and a great all round product, but I couldn't help but feel disappointed.I decided to go directly to Dalstrong contact us section on their website and inquire as to if this was normal or not. The customer service representative went on to explain that although not every knife is the same, my product did lack the folding patterns and that they would replace it for me by expedited delivery. Not only that but that as a goodwill gesture I could also keep the original knife.I think the gesture of being able to keep the other knife in itself was an amazing piece of customer service as I would have been happy just to exchange it and I think Dalstrong now have a customer for life who has been singing their praises to all my friends and family.10/10

Very good quality steel but...
Very happy with the weight balance, qyluality of the steel and the packaging but I feel like the blade could have been sharper and I have found some black taints on the edges of the sharpened areas and I'm a little concerned as to why they are there

Second purchase of dalstrong bought a gladiator series before this one was surprised by the quality s decided to upgrade been a chef over 15 year but this range is worth the extra but @dalstrong you need to make a knife roll for professional use that is as beautiful as the Craftsmanship of the knives but will stand the test of time and up your range o amazon the postage on your website is far to expensave.

An excellent knife with disappointing aesthetics
The knife is well balanced, sharp and a joy to use. I have not had a chance to use it much so I don't yet how well the sharpness will hold up. This should be a 5 star review but as a few others have experienced, the Damascus patterning is very pale and only just discernible on my knife (see photo). For well over £100 for one knife, I would expect it to very obviously a Damascus knife. It should stand out in the kitchen; mine doesn't. I know it is only aesthetics and the knife functions very well but I can't help but feel a little disappointed.
