I have so much copper and many copper pans, but this is the first time I have ordered a Sertodo Copper pan. This thing is the real deal, excellent craftsmanship, really quality copper. I should’ve known because I have other products by them, but I have never ordered one of their pan…. I will continue to order until I have the whole set. These are truly magnificent. Worth every cent!!

I purchased the 15 in. and the 18 in. together.They arived at the same time in a timely manner.The second i braught them inside i knew i was in trouble. When i measured my oven it was about 19 inches from right to left. The 18 in. pan fit perfectly until i closed the door. The door would not close all the way. So i had to send this one back. It took a long time to get aporoval for a refund and now i have to wait another week or 2 for the actual refund to go through. But i expected that to be the case with such an expensive piece of art.Let me tell you something, that 15 inch pan is PLENTY large enough.AND THESE ARE TOTALLY GORGEOUS!

Best copper pan ever! Expensive but worth every penny in design, craftsmanship, style! It cooks well, evenly, does not burn. It’s even somewhat nonstick, very easy to clean. I hesitated before buying it because of the price but I’m delighted with it!

Perfect size for 6-8 people with usual toppings (fish or meat). As with all copper cookware, it needs to be cleaned and polished before use (each time) because the copper tarnishes easily. I use Bio cleaner since it can be used on food surfaces. Copper is very conductive, so heat over slightly lower temps. I make the paella on top of the stove and then stick it into the oven to brown and crisp the bottom. If using an outside grill, it works easily by cooking with the grill door open and then closing it to crisp the bottom. Perfect pan.

This review is for the 18 inch version of the Sertodo Copper Alicante Paella Pan. I bought this pan this Fall and took it with me on a road trip out to Venice California, where my good friend was sharing a house with an up and coming natural foods chef and lifestyle consultant. As a thank you gesture to them for letting me stay, I threw a little paella party and whipped out this gorgeous show stopper of a pan. As previous reviewers have mentioned, it not only performed well in cooking, but it also served as a beautiful part of the party decoration before and after the actual meal preparation. The hand-hammered construction gives this pan a unique look and feel over the machine stamped stuff you see around. Also, the finish quality and details, like the stainless steel handles, are superb. We took advantage of the bountiful selection of squid, mussels, shrimp, and fish available in southern California and cooked up an excellent seafood paella that was a big hit. The paella came out delicious, but the pan itself was the talk of the night. Oh, and also in terms of capacity, we had 10 people at the party. Everyone ate their fill and could have eaten again if they wanted, so this is the one you want for a group of 20.

Made Valencian Paella with this pan and came out perfect. Heats evenly, cooks great, and works perfectly if you are hoping to get the coveted Socarrat. Love this pan, makes me want to throw more parties just to show it off. Pricey yes, but will last your lifetime and an heirloom to hand down. America has enough trash, buy something that will last!Take care of it, wash by hand, dry it thoroughly after cleaning and it will last. If that is too hard to understand, buy the $25 pan. The bad reviews are people who watch too much reality cooking shows and think they are chefs because they bought a chef jacket or a toque. Good pans and knifes are family members, treat them well, give love not laziness.
