00 flour with no additives
This was the only 00 type flour that both 1) offered speedy delivery and 2) had no additives e.g. iron, niacin etc.I needed pure 00 flour to make fresh egg pasta and this was perfect. The dough was very easy to manage after 1h30 rest, and the flavour was amazing.A very versatile flour all around. The gluten content is low compared to most other flours.Reasonable value for money, a bit pricey compared to other brands but top quality.

I’ve tried a lot of different flours for pizza making, I decided to give this one a got since it’s supposedly the most used flour for Neapolitan pizza and it’s got a “celebrity” pizza chef endorsement, so I was expecting a bit more from it.I’ve used it for both poolish and biga preferments and I’ve found that its missing something that my preferred flour has, I’ve done taste tests on my family and this flour is bottom of the list for both types of preferments.Is it a bad flour? No, not by any stretch, I’m critical because I feel it’s simply lacking a bit in comparison, would I be disappointed with the pizza? Again no, I’m being really critical here.I think the real thing here is that everybody should try different flours and figure out what flour works for them with their process and their taste buds.
