Q: How do they go together, no instruction manual

They should already be assembled unless you want to use it as a clamp and not a lift mechanism. Then slide top clamp on bar and insert the bolt and nut that come with it, done. Just don't overload due to plastic parts.

Q: Does it have a built in bubble level?

No. It's not really where you need level. Just put a small level on top of appliance or cabinet.

Q: If I ordered this now would it be the updated all metal version or original plastic version?

I ordered all metal and It's a plastic housing with a metal handle and shaft. They advertised all metal but it's not. It can't lift one side of my washing machine and raided for 220 lbs.

Q: How do you let the jack down easier? when i press the lever, wham! it slams the bed down hard. that is not what the description says will happen.

I don't think there is a way with these to let them down slow, there are different types on the market that actually have a slow release button but they are more expensive, I've tried different things but couldn't get them to slow release.
