They are advertised as having a 2 year warranty so send it back and get another out of them.

how do you refill the cannister ?

If you mean the gas bottle - Sodastream do a return scheme where they will send a full bottle on receipt of an empty one, go to their website for details.

How is the taste with the tapwater?

The taste is just like bottled sparkling water. I always use tap water and am pleased with the result. No more plastic bottles.
