This is an awesome bread flour. I use it to make artesian sourdough boules and it makes the best texture crumb. Was hesitant at first bc of all the choices of flout on here but so far this, their trailblazer flour, semolina, and 00 are my go to's. Glad I bought it and will def be using this again

It’s a great flour, makes great sourdough. It’s a little expensive compared to some higher end flours. Not sure if it’s that much better. It’s worth a try.

I really like this and the Trailblazer flour. However the final delivered cost is a bit too much for regular baking use. They sell direct but don't ship the big bags.

High quality

When I first opened the Cairnspring Mills Organic Expresso Bread Flour I was immediately greeted with the aroma of whole wheat flour. I was surprised as I didn't anticipate the bread flour to have such a prominent fragrance that was so similar to 100% whole wheat flour. When reading the ingredient list it makes sense as the only ingredient listed is organic hard red spring wheat. The manufacturer noted that their expresso flour produces a dark rustic crust and pecan colored crumb. I made a no knead bread and found the flour (like other bread flours I have worked with) was easy to work with and baked into a lovely loaf of bread. The bread had a good chewy and crisp crust. The coloring of the crust was a lovely darker golden brown color paired with a darker colored crumb. It is stone milled, sourced directly from farmers and is a single varietal. It has 13-14% protein. When looking at the price this is definitely a higher priced 5 pound bag of bread flour. I usually buy King Arthur Organic Bread Flour and this is more than double its price. While I appreciate artisanal products and the craftsmanship included, I did not notice anything specific that stood above and beyond other flours that I have previously worked with. It is a Product of the USA. It has a best by date of 4 months from the date I received it which was closer than I would have expected. Overall, it is a good flour that helped produce a delicious loaf of bread but the current price is beyond what I am comfortable with since I didn't experience a noticeable difference from other bread flours.

I use this as a addition to rye bread dough recipes. Excellent result. Less dense rye, great flavor and great lift. It is organic though it is GMO flour.

Really lovely bread flour. It’s a little more expensive than the others but I think it’s worth it.

I understand that this is a product made on a small scale, and they probably can’t afford to sell it for what the makers of the big scale millers do. And I won’t say that I wasn’t happy with the bread I’ve made with it. But I’m also not impressed enough to buy it again at this price. I will say that it can take at least a good 80% hydration and makes a good loaf, and actually makes a loaf that’s fairly dense if you give it much less that that. But any good high gluten flour can do that, too. I don’t regret buying it once, but I won’t buy it again unless I get some kind of deal on it.
