It would appear that running a vegie through this device would result in long, skinny, "shoestring" -shaped cut . How does one create a diced shape?

Can you buy replacement blades?

Yes you can, but unless you are using this daily for a commercial purpose it should be a very long time before you need them. I have two different sizes of blades and interchange them depending on what I am doing. I use this chopper for making jams, relishes and applesauce to can. It gets a lot of use every year and I haven't needed to replace a blade yet. I highly recommend it.
