Vanilla Cake Mix

This cake mix was very good for a 1-Net Carb pastry. I baked it in Christmas Tree cupcake pans and they were delicious. The sweetness level was a little low, but I used some Truvia confectioners sweetener to make some frosting. That did the trick. It only added 1 more net carb per tree. I will buy this product again. For people with a sweet tooth, like me, the pricey cost is worth the satisfaction of mini cupcakes that are low carb. Be aware: This package only makes enough for one layer of a layer cake.

The cake mix is delicious. However, I did substitute the oil for butter and water for heavy cream mixed with water and I added Lily's chocolate caramel chocolate chips inside the batter. It was also very easy to make. Furthermore, the cake muffins in my case rose well but add a little baking powder or whip egg whites to soft peaks and fold into the wet batter slowly for extra rise. The cake is a little small so get two to make an average size cake. The quality is excellent and the texture is perfect just like regular cake. Overall it was a 10 out of 10 for me and my decadent chocolate cupcakes.

The cake turned out absolutely delicious! It was easy to make. One of the best quality mixes I've bought so far. I think it's great for it's value. The cake does come out smal (about an 6 or 8 inch cake that rises about 3/4"). It is keto friendly but you wouldn't even know! it's that good!

This cake is yummy, but I would describe its consistency as more of a bread. Granted I did try replacing the water with whole milk instead. I used avocado oil and butter for the oils. I would recommend just using water instead of milk with all these Lakanto mixes. Also it requires a good frosting, so get yourself some cream cheese and some Lakanto powdered sugar and maybe some Kerrygold butter. I'd say together, it does help satisfy the need for a cake. I'd also say to try the chocolate one instead. I think the chocolate gives the cake a better consistency and is more like a brownie. Also I would stick to the lowest end of the bake time. We actually went with 20 minutes, because our oven cooks really fast. And if it looks doughy in the middle, I'd still say it's done. You don't want to overcook it. Other than that I'd say it was still incredibly delicious and gave me the feeling of eating a real cake.

Absolutely delicious.. I added lemon juice and grated lemon...was extremely easy to use. Very moist and delicious.

Tastes like a cake brownie but it could be sweeter. It baked up moist and fluffy and I didn't mind the texture. Unfortunately, I won't buy it again as it gave me serious stomach upset and gas. It has psyllium husk which is a anti-constipation herb. Not worth it for an occasional indulgence.

This year was my ninth year of not eating sugar, but I wanted a birthday cake SO BAD. I saw this mix (and the brownie mix) and everything in it was legal on my diet. No grain. NO sugar. And it was SO good. I admit I tossed in some walnuts and no-sugar 100% cocoa chocolate chips. But the first bite I took of this was heavenly. I had tried other mixes but they had too much erythritol in them and that stuff is dangerous. It gave me nausea. But this Lakanto cake or brownie mix does not ever cause a problem. The only problem I have is moderating - I could probably eat the whole cake in one sitting!
