Q: Can this be used to make waffles?

Yes, there are instructions on how to make waffles: add eggs and milk. I wasn't too happy with the results when I made the waffles. Just my personal preference.

Q: could you bake this in the oven in a sheet pan, and then cut into individual servings after baking??

The best results are to cook as individual pancakes This is a great mix but not intended to cook like breads in the oven.

Q: Any tips on how to make them rise into thicker, fluffier pancakes? Mine were very thin.

Just tweak the amount of water you're adding to find your personal protein pancake sweet spot.
