Q: How do you store bottarga once opened? I wrapped last piece in plastic wrap, it molded, I was thinking submerge in olive oil or salt like anchovies.

Hi, once you cut it you have to keep it in the fridge and consume within 3~4 days and best wrap is wax papers, if you want to store it for longer you can freeze it. If you have any other questions please don't hesitate.

Hello, I don't suggest eating it fried. It is used more as a condiment or just plain sliced with lemon and/or a good olive oil.

Q: The one I received is dark brown not orange like the picture. Is that normal?

Mullet Botarga is usually deep orange in color. Other fish Botarga can be brownish, some deep brown. I would get in touch with the shipper to verify what they shipped.
