Turn is a cup of tea into a pleasure
Adore this lump sugar. I keep it in my sugar bowl for when I am serving tea to guests. It just feels so lovely when you stir it in and can hear the tinkle of the sugar lumps in the china cup. You do need a lot less sugar, then you would with granulated or castor sugar, I suppose it’s because there’s no air in between the grains. Lovely way to make your tea or coffee that little bit more special.

Great for making bottled cherry plums
Pack a bottling jar with 2/3 fruit and 1/3 lump sugar, top up with vodka and put the lid on tight. Keep for a few months and you've got umeshu plum wine to drink and tasty desert cherry plums to eat. The big crystals of the sugar prevent it all sinking to the bottom at the start which is the problem if you try to make umeshu with ordinary sugar.
