I like to simmer them in red wine, reduce the wine and give them a quick saute to firm them up. I almost always start morels this way, either fresh or dried. They are beautiful in a white sauce. I toss them in pasta. I use them as a side. Put them in gravy (they can stand up against a strong stock). I also toast French bread, spread with garlic paste and top with the morels. I sprinkle on some parmesan and pop for a second under the broiler. So good!

Hi Great question. Our morels come from a host of forgaers both domestic and international. Our team works directly with pickers in Colorado, Montana, Turkey and Asia to select the best quality morels we can find on any given season based on market conditions and overall harvest quality.

Q: We're making morell braised for 60 people. How many of your size morels would we need?

Hi thank you for your question. Depends on your portion per person size. A good rule of thumb with dried morels is that it takes roughly 8lb fresh morels to make one lb dried morels. I would assume anywhere between .25-.5lb at minimum. You can easily add more if needed or save whatever is left and use at a later date as dried morels keep very well as long as stored properly. Like other dried products, morels can theoretically be stored for several years under perfectly ideal conditions.
