Could this unit control a stepper motor used on a heavy duty telescope mount for star tracking? It would push/pull approx. 30 lbs.

This is a motor, not a controller. It is on or off. Not a stepper motor.

What attaches to the turning part?

The output shaft of these motors are a 6mm D-shaped shaft with a threaded hole. Unfortunately, I don't know the specification for the threaded hole in the shaft Instead, I used a small aluminum hub, also available here on Amazon: https://www.amazon.com/gp/product/B00B887FX8/ref=ppx_yo_dt_b_asin_title_o04_s03?ie=UTF8&psc=1 That hub comes as a set of 2, with set-screws, and a small Allen wrench, but no other hardware. For that hub, I needed to get some #4-40 machine screws. I used 3/8" machine screws for the thickness of the material I mounted to the hub so that the screws would not protrude through the hub and into the motor mount. There are other 6mm hubs available that should work just as well. However, I selected the one listed above because of positive reviews, and in particular, info indicating that this hub uses 2 set screws which makes it more secure. That info was accurate. And I've found that hub fits and works perfectly for my application. I hope this helped.
