Q: Are blade & the chopping plate (the round thing with the little holes that the meat comes out of) STAINLESS STEEL also? I'm looking for a 100% unit

Despite the description, the plates and knife are not stainless. Mine immediately began rusting after I washed them and didn't hand dry them. Bizarre because on LEM's website, they only sell stainless steel plates and knifes replacements.

Q: How quickly does this rust if at all?

The body must be a very low-grade of stainless steel, it shows small amounts of rust if I let it air-dry after washing. The cutting blade will start to show rust almost instantly post-wash. The die plates seem pretty resistant. hand wash, hand-dry, hit with some oil to prevent rust.

Q: How wide will the clamp to secure it to a table top open. Could you give me the measurement, ie, 1-1/2", 2" , etc.

It opens to a hair more than 1-1/4". If that is too narrow for your countertop, you can do what I do. I clamp it onto a piece of 3/4" plywood. I lay a towel under the plywood, between it and the countertops and use speed clamps to secure the plywood to the counter tops. If you have decent countertops, you will not likely want to secure this directly to them anyways because it may scratch them.
