Q: Is there a version of this that will allow you to keep the water on without continuous pressure to the foot pedal?

Not through a foot pedal assembly from any brand I'm aware of. Most foot or even knee valves are turned on immediately when the pedal is depressed and close when you take pressure off of it. At best some can be swapped with a "slow close cartridge", but I'm not aware of anything that turns on when tapped, then off when tapped again. Have you considered an electronic faucet?

Q: Can you control water temperature with this?

It's one line in, one line out. No control. Only solution is to have a mixing valve to mix the hot and cold water to your desired temperature. If you use a manual mechanical version of this and mount it in a place where you would have control, this could be achieved.

Q: Would this foot pedal valve be suitable for outdoor use, exposed to the weather? Or would it rust or corrode?

Not Sure, the one I purchased and installed was indoor. Ours is in use in a clean room setting and is exposed to rigorous cleaning using strong disinfecting chemicals and has held up very well. Dan

Q: Can I alternate between using the foot pedal and the faucet?

If you run the input pipe to the footpedal then to the faucet it will work only as long as the faucet is turned on. We don't use a faucet just a pipe coming out of the sink. The foot pedal is very durable and works very well.
