After reading confusing reviews saying that this isn’t the latest, I looked USDA incline and found that 2015 was the latest year for them change their tables. And that this is the latest printing of that data. My wife and I had found conflicting info on canning recipes and wanted to know what the Department of agriculture had about it. For instance, there is a recipe for Jalapeño Salsa online that recommends a 15 minute water bath canning for pints and quarts! Best to read this before you follow one line recipes.

Lots of knowledge, not a lot of recipes
This is a good book to understand the science, equipment and terminology for canning. Definitely a go to for beginners. However recipes are lacking. Just starter basics. I refer more to my Ball book for regular use.

It's a forgery! Not USDA!
This book is a pirated version of the of 2015 publication and not an authorized reprint from the USDA. Don't trust the recipes.

Basic and not a bargain
Having been convinced I needed this for the USDA approved methods for canning I have to say it was no better than my old Ball Blue Book from 1985. Sure, a couple of the methods or time or headspace have been revised but overall I learned nothing new. I imagine all of this info is availanle for free from USDA extension services online. Wish I had just spent the money on more lids!

This is a great book for new canners. Recipies are tested and safe.

Counterfeit Copy
Although the info is ok, this particular copy is pirated and is a counterfeit. The official last printing was the 2015 edition on the USDA website. I do not recommend this book for that reason and appalled that Amazon sells fakes like this.

Keeping up with the updates recipes!!
Super happy to get the updated version of my favorite recipes. Not everyone knows that canning and preserving recipes change over time.

Such a great reliable book you can trust. Which is so important to me as i am a newby to canning. Well worth the money.

Everything you need to can safely
Great printout of the pamphlet on their website (I prefer to have a paper copy) with all the information you need to can anything properly, keeping your food safe for storage and consumption.

viele tolle Rezepte zum Einmachen im Schnellkochtopf
Alles auf englisch, aber trotzdem gut verständlich. Viele ausführliche Rezepte mit genauen Angaben zur Einkochzeit und Einkochtemperatur. Habe es zum Einkochen von Fleisch gekauft. Hat mir super weitergeholfen.

Must have for canning, especially for Beginners
Can't go wrong with this guide for safe canning. Should just call it canning bible.

Not in colour.
The previous version was in full colour, this version is printed in black and white and not printed to full page. Otherwise it is a pretty informative book.
