This has made making kimchi awesome
I hadn't made kimchi before using this product, but I have many times now with this onggi. It traps the gases really well, so the odor stays in until you open it up. And the kimchi always comes out delicious. It works great as long term storage in the fridge until it makes sense to reduce container size and save space, which is usually when you want to make the next batch.

Perfect for making Kimchi!!
I originally bought Crazy Korean Cooking's small 0.4 gallon Kimchi Fermentation and Storage Container as I had never made my own Kimchi before, and wasn't going to make a lot of it my first time. However, it turned out so good that my wife and I went through it in no time. I then purchased this larger 1.3 gallon container so we could make larger batches, and it works perfectly. We can make Kimchi using either 1-3 Napa Cabbages (or more, depending on their size), and with the inner lid designed to keep out air, their containers are absolutely fantastic at making delicious Kimchi easily.We found that we could still use the smaller container purchased first by keeping the larger container in our older refrigerator in the garage, and taking out enough Kimchi from that one and placing it in the smaller container that we keep in our kitchen refrigerator (which is always pressed for room it seems), and it works great!If you like making your own batches of Kimchi, you owe to yourself to try using these containers as you can't go wrong. Great little fermenting box.
I'm very impressed with this little box. I made my first ever batch our sauerkraut with it and it came out great. The inside piece that pushes the veggies down and holds them down under the brine is genius. The silicone around the edges keep it from floating back up.

Smell
Love everything about the container except for the smell wish it would lock in the smell better

Much easier to clean and seal than an old fashioned Onggi
I didnt really know much about the "right way" to do kimchi so I tried a bunch of ways. This is the best for confining the anaerobic fermentation. I have been using an old plastic ice chest (which worked) and a real clay Onggi (which also works and looks cool), but this is way simpler.
