Can I manually set the slope when I'm laying pipe? Does it still work if off level?

The DW079 has: "A manual single sloping mode allows the user to set grade +/-5 degrees" this will do, a 1/4" drop in 1' = 4.5deg

I'm an artist looking to make a laser line around a room. Would this do it and would it be visible to gallery visitors (without blinding them)?

NO,NO,NO. This is a contruction tool only, it will cause permanent retina damage when it hits you or your visitors in the eyes, even for a moment. You have a responsibility for your guests safety. They do use lasers in light shows and concerts, but they shoot above the heads of the audience and have specialized companies that do this and carry a boat load of liability insurance. Maybe you could paint a line in UV paint and use a black light?

Is the included "contractor's bag" large enough to also store the tripod and the rod?

The bag is the size of a large lunch bag. It is form-fitted for the LASER head, and there is not a lot of toon left over. I would not put anything loose in that bag that might bounce around and hurt the unit

Does it have a vertical laser pointer?

It could be used as vertical level, but it should be turned to side and levelled manualy using built-in bubble. All precision will be lost in vertical mode and there is only one laser pointer - you can't get both lines at the same time.
