is this olive oil unfiltered? thanks..

All Entimio olive oil is filtered with paper filters allowed under USDA organic certification. This "natural" filtration method is a relatively expensive process and has the purpose of reducing water content and solid residues to ensure shelf stability and maximum health benefits for consumers. I know that other sellers promote "unfiltered" olive oil as more natural and healthier. Unfortunately, that is not true, and all olive oil experts agree on this matter. Also, for maximum transparency and safety, we test all our Entimio olive oils after bottling. By doing so, we are sure that all values (polyphenols level, free acidity, absence of pesticides and resides, etc.) reported on our listings relate to the same product you will get at your home, after filtering and bottling. And if you still want to experience unfiltered olive oil, you should do so during harvest at the producer site or at least within three, max six, months from harvest. The higher water content and solid residues present in unfiltered olive oil contribute to significantly faster oxidation and reduction in the antioxidants content of any olive oil. How long would this olive oil be good for after harvest ? also about how long do you think it would last using everyday ? thank you in advance

If properly stored, it will retain its healthy properties until two years after harvest. For example, for the 2018 harvest Entimio olive oil, the "Best Before" date indicated on the packaging is 10/31/2020. After opening, we recommend the olive oil to be consumed within sixty days from opening to enjoy its exceptional flavor and healthful properties. We also recommend storing the bottle in its box, in a cool and dry place, away from direct light and heat sources at any time, before and after opening. The ideal storage temperature is 55-65F (12-18C), so your wine room/cooler would be a great storage place, even though a room temperature up to approximately 75F is also ok. All Entimio olive oil is estate bottled in individual UV-protective dark glass bottles, sealed with inert gas and come in a beautiful box to maximize its shelf life. The high oleic content, low acidity, low oxidation and high antioxidant level at bottling of all Entimio olive oil help to preserve its freshness, flavors, and healthy properties. The above indications and recommendations are valid for all olive oil, with high-quality olive oil like Entimio having a longer shelf life (before and after opening) than generic lower quality olive oil.

Which product is best for drizzling over pasta, good on salads, and when called for as an ingredient in various Italian recipes (mostly pasta dishes)?

Great question. Entimio Cortese is the most versatile of the Entimio family and great for the uses you describe. It is the most delicate of the family, while still being fruity, having a very good level of polyphenols (>400mg/kg) and a very high smoke point (> 470F). Its green medium fruitiness with notes of green almond, fresh-cut grass and olive leaf make it a great companion for most recipes without overwhelming your other ingredients. This collection states it's from the 2021 harvest. So, why aren't the individual varieties also available from the 2021 harvest? Thanks.

That is correct; as of March 2nd, 2022, the Entimio Collection Gift-box is from the latest 2021 Harvest, while Entimio individual varieties are from the 2020 Harvest. So our product titles will tell you precisely what you are buying, 2020 vs. 2021. We have 100% of the distribution of the Entimio brand, and we understand freshness is critical to our customers. Because we agree that freshness is a vital part of the value of olive oil, all our 2020 Harvest bottles are selling at a material discount to our regular 2020 prices, with discounts up to 30% when you buy multiple units of our products. Why did we decide to sell the Entimio Collection Giftbox 2021 Harvest before having the entire 2021 Collection available? The main reason is to mitigate the impact of the logistical delays and increased costs for our customers. How did we do that? A) We shipped a small number of olive oil bottles early via airfreight to allow our customers to try the 2021 Harvest as early as possible, which we are selling as the Collection Gift-box. Unfortunately, airfreight is fast but very expensive, so we could not ship all the olive oil via airfreight. B) We prepared a larger than usual shipment in November 2021 via temperature-controlled containers to reduce the higher input/shipping costs for the bulk of our inventory. Take advantage of the discount on the 2020 Harvest collection, which is still a great product at a value price. Then, enjoy the 2021 harvest with the Giftbox collection if you seek the freshest olive oil, and in about two weeks, you will have access to the entire Entimio 2021 Harvest collection. May be Good for your health

Delicious and good quality, pricey-- but I count it as a supplement with the high polyphenols for my health so it's worth it. Can use it as a finishing or a dip, solo, etc. This is my second time to order it. Each time, delivered on time, well packaged, fresh no breakage. I actually prefer a very strong flavor and this is in between--not mild, but not powerful.

Best olive oil in North America

This is authentic Italian olive! The flavor is fresh and crisp. I love that the flavor keeps even at high cooking temp. It also mixes well and bakes well into desert. The price is on point for this excellent quality olive oil!

You'll never know until you try

I found this after watching Jessi & Alessio's olive oil review on youtube (You’re buying fake Olive Oil.. HOW TO TELL THE DIFFERENCE). It seems expensive, but I wanted to try it anyway. Since the best deal was to purchase the gift set, and I wanted to try all three, I scheduled a few meals around this set and made the order. I invited over some company and we put on a little tasting event the evening after it arrived. I was absolutely blown away at the quality, aroma, and flavor of these oils, especially after comparing it to what I'd "always thought" was olive oil! It's not cheap, but it's definitely worth every penny, and I'll always have this olive oil in my house.
