Q: how do you drain the oil?

I purchased a large funnel with a filter made for cleaning the oil. Lift the middle pan and pour through the funnel into its original container.

Q: Do you need to drain the oil after every use? If not, how long can you leave the same oil in the fryer?

The "cool zone" concept actually works. I had a DeLonghi fryer where the bottom of the oil container was the heating element and experienced a lot of bread crumbs / breading turning black quickly. Get a gallon container, when the oil is cool enough to handle but not cold, pour oil into container through a screen seive, wipe out oil pan, pour oil back in through the sieve and you're good to go. If you're concerned about the container not being air tight, a couple pieces of cling film over the top solve that, just remove before next use. Can use 10 or 20 times before replacing oil depending on what you are frying and if you strain after cooking and remove residue. Great fryer.

Q: Why does the rest button keep going off? it won't let me heat the oil,the reset swithes n... very frustrating

Q: Can someone confirm the temperature settings are accurate? AKA, set it to 375° and put a thermometer in it to confirm it's actually getting there?

I check the temperature every time I use it just to be sure and it has been spot on or within one or two degrees every single time. I have had no issues with it maintaining the selected temperature.
