Will this gauge work on concrete, cmu and drywall substrates?

From the description on the manufacturer's website, this is meant to detect layers on metal. This is typically used in the automotive industry such as detailing and body shop work. So, with that in mind, I do not think this will work on concrete, cmu, and drywall surfaces. I suggest you email or write to the manufacturer to verify this information.

Does it measure bumpers' paint tickness?

I’m sorry, but I have not tried to measure bumper paint thickness. I don’t believe it will work on plastic. The readout is big and the meter works very well.

Does it come with additional attachable probes?

No. The 311 has a built-in / integral probe.

Does it read out the thickness of each individual layer, such as primer, base coat and clear coat thicknesses?

No. It is used to measure paint thickness to provide indication of overall condition of paint work.
