Francois Pralus now has his own plantation in Madagascar on the island of Nosy Be, also known as the "isle of perfumes". From Sao Tome by way of Brazil and Venezuela, Monsieur Pralus has personally selected cacao for the plantation from the finest origins in the world. The beans are grown, harvested, and fermented with care and then roasted and transformed into a delightful chocolate in his Roanne facility. It was in perfect condition--had not even melted one iota, even though our temps were in the mid-90s while in transit and when received. Caputo's knows their stuff. And yummmmm! Lovely chocolate. Great to give as a gift.
This bar has zero bitterness, notes of red fruit, raisin, and a cocoa finish. It has a subtle, pleasant acidity. Love it. I've bought it for myself, and given as a gift twice, so far. Great texture.

smooth taste with berry flavors
This chocolate is amazing. It's dark but doesn't taste as dark as it is. There are definite berry/fruit flavors but it is smooth. It tastes really good with salty Marcona almonds and red wine too!! If you love dark chocolate with berry tones, you'll love this!
