Q: Can these be frozen? I live in the middle of nowhere and I am the only one who eats this, so wondering if anyone has tried freezing them.

I don't know how the texture would be affected by freezing them. But these are pickled herring, and they keep for a long time in the refrigerator if you are careful to use a sterile utensil to extract them. I noticed that a jar of pickled herring that I bought a month or so ago (at my local Walmart, if you can believe that) has a "best by October 2016" sticker.

Q: Where do the herring come from? Herring from the Baltic Sea sometimes have a lot of pollutants.

The filets come from Belarus, on the Baltic Sea. I have been eating them for ages, without health problems. It's your call.
