No clue what it does but it works
The chocolate cake recipe I make calls for this. I truly have zero clue what it does but I think it works because it is one of the best recipes I have in my arsenal.

Best cake
Baking is not my thing so when a recipe called for Glycerol Monostearate I had never even heard of it. The cake however was spectacular - particularly the texture. This, I have learnt is due to the GMS. Keen to try my hand at a different cake now....
