It says the product is 98% minimum purity. What could the other 2% be?

I can't say for certain, but since sucralose is made from sucrose (sugar) by exchanging three chlorine atoms three oxygen atoms in the molecule. I would suppose the 2% might be unconverted sugar. The minimal change in the sucrose molecule results in sugar sweetness, but sucralose is not utilized for energy in the body (ie contributes no calories) because it is not broken down like sucrose. It passes rapidly through the body virtually unchanged. This is also why the nut cases claiming it causes all sorts of health issues make no sense. Sucralose does not effect the body (other than tasting sweet) because it is not metabolized by the body.

Why the change in brand and increase in price?

When Tate and Lyle (splenda) had the patent it was over $500 per Kilo. I'm not complaining now.

What sweetness is the little spoon that comes with equvalent to?

I am old and have lost much of my taste for sweetness. For cereal, where I needed two heaping tablespoons of sugar or 6 packlets of Equal, I need about one third of the little scoop that came with the sucralose which is 600 times as sweet as sugar. With the 100% aspartame powder, which is about 1/3 the sweetness of sucralose, I need about 3 full scoops which gives it a somewhat bitter taste. All depends on one's sense of taste.
