Best I've ever used
Had for 10 years across 5 restaurants, stolen twice just got a new one each time. Stays sharp with a honer with hard use. Perfect for bulk veggie prep. YOU NEED A KING STONE or equivalent to sharpen, steel is too hard for any thing else to touch.

Love it. Well balanced and extremely sharp
Love it. Well balanced and extremely sharp. This knife will cut translucent pieces of whatever you want to slice with it. And it's light. It's not heavy and thick like the American knives are. I will never go back to American design knives. But...these are so well made that I doubt that I will ever have to replace them.

Great looking knife, package arrived on time and in great condition. Knife is sharp, good weight while carrying/cutting.

Great knife
Haven't used this knife as much as the Misono UX10 Santoku I got at the same time... honestly, I just don't like longer knives as they can sometimes be less nimble to work with. But you need a longer knife occasionally, and this one is pretty darn good and a good compromise in terms of price, considering how little I use it.

Like a Large German Chef's Knife -- Only Much Sharper
I love this knife, which is similar in size and shape to my large German Chef's knife, but much sharper -- 15 degree grind on one side only. Needless to say I use this for lighter duty meat slicing, and heavy work I leave for the German knife!
