GREAT TASTING!
Very tasty! Great gor sauces. Dips, marinades.. This one has a nice "fermented" flavor.

An Essential Vinegar
This material changed my idea about what vinegar could be and what role it should play in savory dishes. In addition to the acetic acid flavor found in white vinegar this has a collection of umami flavors and smells that complement the flavors of soy sauce. Nearly any dish that employs soy sauce can be made subtly better by including this vinegar. My own kitchen has white vinegar, apple cider vinegar, balsamic vinegar, umiboshi vinegar, homemade fig vinegar, and fruit-infused vinegars. As I continue learning to cook I am holding good vinegar in ever higher regard as an essentila flavor ingredient. I love the depth of flavor of balsamico; but sometimes it is just a little too sweet or too heavy. This dark Chinese vinegar provides a similar kind of depth and complexity without the heaviness or sweetness. I keep my pantry stocked with several years' worth of inventory and use it for every stir-fry.

great taste less acidic
the taste is less harsh than other vinegars which my husband and i prefer...i will be buying again... great to mix with soy sauce and a bit of sugar to dip pot stickers into

Great taste and nice color and depth of flavor
This Chinkiang Zhen Jiang vinegar is very good and is much better than substituting apple cider vinegar in recipes. It's a must have in Pot Stickers dipping sauce as well as the stir-fry dish, Orange Beef. I would buy it again. Remember, always use any vinegar at the end of the dish as you do not want to cook it.
