How much would 6 12v 7ah batteries last me when riding?

Assuming you intend to put them all in series to make a 72v nominal bank, the total of 6 batteries at 7ah is 7 amp hours. So if this controller realisticly pulls 50 amps as rated, 7 divided by 50 is 0.14. 0.14 times 60 minutes in an hour means about 8.5 minutes run time at full throttle till bank depletion. Of course, if you are using half throttle at half the amp draw, you get twice the time. See?

Can i safely use a 20s lipo battery 4000mah and 25C for the 72v?

Yes . I have used similar set up and worked fine . This motor can also be overvolted but that will lower its total lifespan.

I want to buy this motor to put in a dyi drift trike, do you think it would have enough torque for that?

Motor is capable of producing 5Nm of torque. Golf cart motors are around the 7-12Nm range. Higher gear ratios give more torque but less top speed.

Will this motor run full-speed in both forward and reverse?

The motor will run at 100% speed forwards and 50% speed in reverse.
