Best Boiled 10 Mins+, Not Mushy or Sticky, Good Plant Option
Our daughter is vegan and wants to limit processed carbs so we try to cook plant-based pasta dishes she can eat, and ideally us as well. We have tried several in the past which she mostly hated because often times they wouldn't hold their shape, would be gummy, taste funny, were mushy, or super hard at the other end of the spectrum. And I can cook all kinds of dishes, so I'm aware of lengths of time to boil and how to check if done. These required a little tweaking if you don't want too hard of a noodle with a little crunch - they remind me of the consistency of bamboo shoots found in many Asian dishes. I was a little worried if I boiled too long, they would become too soft, but I soon discovered it would be hard to cause that to happen even if you tried. You can boil these a long time and they remain firm. So I boiled them about 7 minutes, and I think they could have gone a little longer like 10 minutes easily. I would have liked them a little softer, but as part of a vegetarian, vegan, or any meal these can work really well. They only make about 2 small servings, but I was happy to see that they are responsibly harvested so both a healthy and sustainable option. In the photo I attached, I boiled them with some mushrooms just to kill two birds with one stone, took the photo without the other ingredients so you could see the noodles well, and then I added a homemade pasta sauce with tomatoes, herbs, and garlic (added cheese for my serving) and the dish turned out delicious. This is definitely a good viable plant-based substitute for typical high-carb glutenous pasta.

Good option for a Keto lifestyle
Very mild and an excellent option to high carb linguine. I have tried many options and these are the best and most filling. Being Italian I can still have my pasta while maintaining my Keto lifestyle. They cook up quick and don’t break apart. I just used a diced tomatoes sauce in the picture that I added Parmesan cheese, Italian spices and garlic to. Delizioso!

Is it pasta? No. Is it tasty and texturally pleasing? Most Definitely!
I should preface this review by saying I'm a big fan of hearts of palm. I can eat them right out of a jar. So this product intrigued me from the start. And given realistic expectations, it did not disappoint. I created a tasty "pasta" dish using these noodles, some quality jarred tomato sauce, and vegan sausage. I rinsed the noodles well, but I did not soak them in milk (as they suggest to get rid of the palm taste). I like the palm taste and really, once you add other ingredients to your dish, the taste moves way to the background.As you can see from the photos, they are the shape of linguine, however, each piece is only about 4 inches long. They remain firm, giving something close to a pasta al dente feel in your mouth. And sauce sticks to them. I found them more tasty than say zucchini noodles, but not as tasty as lentil or garbanzo bean noodles.Hearts of palm are basically water, so if you want some real nutritional value you're going to have to add a protein and some good fats, like I did with the vegan sausage. In this context, they are an excellent wheat pasta substitute.They are however, expensive. Each package is maybe 2 servings if the pasta is not the main. For me, it was one big serving.

Distinct taste and texture
The noodles are aldente/chewy when prepared. I made a chicken pesto pasta dish, so really only needed to heat them up. If you’ve ever opened a jar of heart of palm you get that distinctive smell and that could be offputting depending on what you’re making. I thought I’d like them more than I did, but when you factor in the price for these, there’s other noodles on the market that I prefer.

Good substitute.
As a diabetic on a low carb diet, the closest I’ve gotten to having spaghetti with my meatballs and low sugar sauce is the shredded Parmesan cheese I put on it. No, this doesn’t taste or feel exactly like pasta, but it feels like you’re eating pasta. It’s more filling like pasta. Yes, it’s expensive but try eating 1/2 serving at a time. If you’re used to not having any, half is better than nothing.

Don't cook as listed on can, otherwise really good
The can says to drain and rinse followed by adding the linguine to a sauce and cook, don't do this, it wont taste as good and it wont give you a mouth feel that you would hope for out of something you are using to replace pasta with.What I do is that I drain and rinse the pasta, and then I add it to already boiling water, stirring it occasionally for 8-12 minutes, I've heard some people boil it for longer just fine, but at 8-12 it has a similar to al dente snap to it.On it's own it has a slight taste, it's familiar to me, but I can't really pinpoint what it's like, but it's a vegetable like taste. In sauce you dont even taste that really. If you've ever had the bean sprouts that come in your average chinese food, it make a crunch sound like those make when you bite in.I've tried this with both a homemade alfredo sauce, and with meat and a savory gravy/sauce which I made with the meats, their drippings, crab seasoning, heavy cream, and xanthan gum(I was basing this sauce on the gravy used on the classic american dish, the s*** on a shingle, which used shredded cheese as the binder for the gravy, but I was out, hence xanthan gum as a replacement binder)It was delicious with both, I think it pairs better with the cheesy sauce as opposed to the savory meat and gravy, but both were goodAll in all, I think it was a really good purchase, just wish all these keto diet foods were cheaper, but you gotta do what you gotta do to lose weight and live healthy.
