Q: Is this bag resealable? Some do and some don't have a ziploc type seal on them.

Yes, it is resealable. However, the sealing strip does not always work well, so to prevent having to clean up a flurry of bonito chips I use a bag clip to be certain it stays closed. By the way, my cat loves them!

Q: Is this for takuyaki?

Yes, you can use it (plus seaweed) to make the Dashi for takuyaki. I use it to make Dashi for my Miso. It creates a great Umami.

Q: Does it have to be refrigerated?

I don't think so. They are salted for at least a year and stacked under weights. Then they become like hard rock, shaved into thin paper-like flakes and bagged with air. Ours kept for a couple months as we sprinkled over rice. I just closed it after rolling most of the air out. My husband became a lover of bonito flakes! Best wishes.

Q: What is the shelf life of this stuff after opening?

I can't tell from the package, it's in Japanese. It is dried fish and appears to be salted. I'm guessing that it would last a long time if you keep it dry. I opened my package months ago and I don't notice any difference in the smell. Also, there is a web address on the package, http://www.kaneso22.co.jp/ if that is of any help.
