If the mirrors are tucked in a bit, shouldn’t be an issue. But you’re lane splitting, so good luck.

Will this fit on a vespa gts 300?

As long as the handlebars are 7/8 outer diameter, yes they should fit

Wow that’s crazy mine are still on I’m sorry to here hear that to on to answer your question if I where able to recover it and the mirror is still good I would just put it back on paint it back to black but that’s just me lol I’m to cheap to spend money like that hope this helps have a great day

What size is the thread that the mirror shaft screws into?

The mirror shaft isn't threaded, it has a detent toward the end that the 6mm hex set screw in the bar end clinches into place. Loosen the 6mm set screw, and the mirror shaft will slide right out. Sliding out the mirror shaft exposes the 5mm tightening screw for mounting into the handlebar. (of course, we can't have two of the same-size screws, now, can we?) I wasn't able to get mine installed (wouldn't expand enough to secure itself in the handlebar), but functionally that's how the install should operate.
