Does the 3/8 size is The same like fast food ?

Well, technically... 3/8" is 1/8" larger than 1/4", since 1/4" is equal to 2/8" but who's counting???

Where can you purchase different size blades for the E-French fry cutter?

Unit comes with 1/2 inch blade. Amazon also sells a 3/8 inch replacement blade, which I find more useful. I’m unaware of any other sizes being available.

If I buy this replacement blade (and don’t have the machine/pusher that it fits in), could I use it by itself to dice hard boiled eggs?

It’s possible. But an actual egg cutter would be better

We have the 3/8" blade and it produces great, thin potato strips! I don't know of a 1/4" blade. If you don't already have the 3/8" blade, give it a try!
