How stiff is this blade?

This boning knife is a medium flex - it’s not the most stiff blade out there but does have some give. It keeps the same flex even after 7 years of everyday use, with being sharpened several times a day. Hubby is a Meat Cutter for a large chain grocery store and been buying this brand for 40 years. (Forshner brand merged with Victorinox)

They are made in Switzerland , same company makes the Swiss Army knife

It’s an excellent knife for trimming! I use it to clean skirt steak.

Super cuchillo, vale la pena si cortas carne seguido

Lo uso hasta para cortar fruta, es muy filoso y semi-flexible. Lo único es que no puedo descuidarme porque si me podría cortar un dedo. Para la carne ha sido maravilloso, puedes usar la punta para abrir paquetes cuando viene al vacío o para entrar entre pellejos. Compro mucha carne en pieza completa y la corto yo mismo, esto lo hacía con un cuchillo de chef muy bueno, pero al ser completamente rígido me costaba trabajo no llevarme más carne que grasa o pellejos. Realmente recomiendo este cuchillo, llevo 3 meses usándolo casi diario y no he tenido que afilarlo realmente.

I already own a few knives from the Victorinox Fibrox series, and they are truly excellent for the price. This Santoku knife with scalloped edge is no exception. It’s very sharp out of the box and stays sharp for a long time. The scalloped edge helps prevent food from sticking, which makes cutting faster and easier. The handle is comfortable, non-slip, and feels very secure in hand, even during longer use. For this price range, the quality and performance are outstanding. Highly recommended for anyone looking for a reliable everyday kitchen knife.
