Does this work with a Mac running latest 10.10 Yosemite?

It will work as a plug and play device, so a 5 axis, with buttons controller. Mac OS doesnt need drivers for this to be supported, but we dont have any Mac drivers and software for this particular unit currently which would provide programming support and activate the LCD panel to show the clock. Other than that it should work fine on titles such as X-Plane.

Will extra throttle knobs be supplied on purchase so that we can configure the quadrant to have two throttle knobs on two axes as engine 1 and 2 ?

The three three levers are individually selectable using FS. I use one as the throttle and one for carb heat on the Cessna. Each leaver has both an analogue and digital setting, off when fully down and on when moved and analogue from off to max for all three. None have preset uses as with the buttons or switches on the yolk its self
