Do Callebaut 7030 70% dark bittersweet callets have more sugar than Callebaut Belgian dark baking 11lb block?

I do not have the packaging any more, but I have interchanged the two for recipes and they taste very similar. Also on their website they list them together so I would expect the nutritional values to be similar... 26g sugar /100g chocolate

Please provide an exact ingredient list. Is the cocoa solids cocoa mass or cocoa butter? I'm interested because onlycocoa mass has the health benefits

the ingredients on the bag I have say: unsweetened chocolate, sugar, cocoa processed with alkali, soy, lecithin,emulsifier,natural vanilla flavor,milk.

Can you please tell me if this product contains soy lecithin?

i just received a shipment and yes the label on the pkg says it contains soy lecithin

What is the liquidity of the callets? (Callebaut rates liquidity of its chocolate on a scale of 1-5, designated by teardrop icons on the package)

i use it to cover chocolate carmel turtles. i melt it in microwave for 1 to 1 and a half minutes. it comes out perfectly tempered and usable for my coverture.
