why does picture show two colours?

Think the picture is deceptive, the ones I purchased are definitely clear and hold the glass solid!

Can you use these to stick plastic bowls to highchair tray?

Probably, they stick well to any smooth surface.

Does the suction work on wood to glass?

It would probably depend on how smooth the wood was. You could always use a spot of suitable adhesive to help if a problem. I used this method to secure a glass top to garden furniture.

Do they leave a visible gap between the two surfaces once stuck between? I wish to secure a clear Perspex sheet to the top of a solid oak coffee table

No visible gap. I am using them in between a glass sheet and the top of a white dressing table. Absolutely fine, they are quite discreet. I thought they might be too big but they are fine.
